Pumpkin is the quintessential winter flavor. Although
usually associated with sweetness (looking at you,
Pumpkin Spice Latte), pumpkin can be a savory
powerhouse! This flavorful, satisfying pasta dish is
made with pureed pumpkin, giving life to holiday pantry leftovers in a new way. The addition of
pumpkin to a traditional tomato sauce creates a
velvety potassium–, iron-, and vitamin A-rich sauce,
which can help support blood pressure goals, eye
health, and immune function. Add a sprinkle of grated parmesan cheese for a salty boost, or add a small
amount of sugar to help balance this dish’s sweet and
salty profile.
Potstickers, also known as jiaozi in Mandarin, are a
delicious staple of Asian cuisine that originated
1800 years ago in Northern China. Although jiaozi
are known for their savory fillings, like pork and
shrimp, this vegetable-focused recipe incorporates
a special ingredient: monosodium glutamate (MSG).
MSG enhances the meaty, “umami” qualities of the
mushrooms, as well as reduces the total sodium of
the recipe by 35% when compared to using table
salt alone. The rich, savory profile of the potstickers,
and the satisfying crunch after being pan fried,
makes this recipe perfect as an appetizer, an entrée,
or a crowd-pleasing symbol of good fortune for any
occasion.
Traditional murgh makhani, also known as butter
chicken, is thought to originate in Delhi, India in
the 1950s. Although its origin story is “hotly”
debated, this tomato-based curry provides a
balanced spice profile, including cumin, garam
masala, and paprika. The tomato sauce, when
mixed with probiotic-rich yogurt, give this dish
its characteristic orange color. A diet full of
colorful foods, and using chickpeas instead of
the traditional chicken breast, ensures a high
intake of both fiber and polyphenols, two
important dietary compounds that help fend off
cancer and promote brain and gut health.
Bibimbap, or “mixed rice,” is a popular Korean
meal consisting of savory vegetables, a
protein source, and a spicy-sweet sauce
called Gochujang, all over rice. Not only is this
dish filled to the brim with antioxidants, but
bibimbap is a gut health powerhouse.
Resistant starch from the refrigerated rice and
the healthy bacteria from the fermented
kimchi provide both prebiotics and probiotics
to support a strong, healthy gut microbiome.
A thin layer of honey-sweetened Greek yogurt is topped
with fresh raspberries and lemon zest and then frozen
and broken into chunks for a colorful snack or healthy
dessert that kids and adults will love.
This Greek-inspired stuffed eggplant is filled with
veggies and flavors of the Mediterranean. The dish is
easy to pull together as a healthy and tasty weeknight
meal. Eggplant has been associated with numerous
health benefits like reducing the risk of heart disease
and minimizing oxidative stress. Whether you serve
these stuffed eggplants as a side dish or make it the
main attraction, you'll get plenty of veggies in every bite.
